{Chicken Tortilla Soup}

I fell in love with Casey and her sweet family when we were both featured on my sweet friend Annalea's blog for Sponsor Week. I quickly discovered she went to Baylor, which is in my town and we share a dear mutual friend.  Love ka-winky-dinks!


Casey proposed a blog link up for recipes that your family loves, to help one another get out of a cooking rut.  Of course she gave plenty of advance notice, to which I promptly waited til the last moment.  Funny thing is I cooked this meal last week and had pics ready to go, but life happened and here I am a day late. Forgive me won't you?

I love Chicken Tortilla Soup and wanted a simple, tasty, and quick version to whip up at home on a whim.  So after adding and subtracting ingredients here is what I came up with.

{Carlisle Chicken Tortilla Soup}
* Note: this is Crock Pot Meal.


Ingredients:

* 1 Campbell's French Onion Soup 10.5 oz
* Chicken Broth 4 cups if you make it with Bouillon Cubes or 3 10.5 oz cans
* 1 Canned Chicken 12.5 oz, or approximately a pound of cooked and shredded chicken
* 1 Kidney Beans 15 oz
* 1 Black Beans 15 oz
* 1 Medium Rotel 10 oz
* 1 Canned Fiesta or Mexican Corn 15 1/4 oz
* 1 Small Diced White or Yellow Onion
* 1 Tbsp. Taco Seasoning or to taste
* 1 Cup of Cooked Rice

Optional Ingredients:

* Shredded Cheese
* Sour Cream
* Sliced Avacado
* Tortilla Strips or Chips


Step 1: Open all cans and drain your chicken, corn, beans, and rotel.

Step 2: Add French Onion Soup, Chicken, Kidney Beans, Black Beans, Rotel, Corn, and Diced Onion to crock pot and mix thoroughly.

Step 3: Add Chicken Broth and Taco Seasoning.  


Step 4: Set Crock Pot on High and cook for 4 Hours or Low and Cook for 6-8 Hours.  This recipe is very versatile and will only taste better with more simmering time.

Step 5: I have added my rice to the pot or scooped it into each bowl at serving, whatever suits your fancy.  Just remember the rice will absorb the soup and broth may need to be added if you have leftovers and have combined the rice.

Step 6: Garnish with optional ingredients and enjoy!

Sorry I don't have a finished product pic, we pretty much devoured it when it was ready for dinner. I also freeze my leftovers by sealing them in a freezer bag and laying it on a cookie sheet in the freezer.
